While this will not directly address backup and restore from MI to back on-premises SQL (this is also being considered and some updates might follow), we are considering a replication technology which might help support this scenario. We are exploring product improvement opportunities in the area of hybrid link using distributed availability groups (AG) replication technology between SQL Server and MI. This will enable near real time data replication between SQL Server and MI. We are also considering failover scenarios both ways. Snapshot as Hyper-V is not supported in Azure yet, but we are working with the relevant teams to get something equivalent. We don’t have an ETA at this point. Please stay tuned. Thanks!

It's very surprising that most of the people at Azure don't know the idea and the Workflows of taking and restoring VM snapshots. This is something that is supported in Hyper-V from the beginning.
We want to be able to take a Snapshot of a VM which includes a Point-in-time snapshot of the OS disk and also any data disk that is attached to the VM.
This snapshot data Can be stored in the same storage account where also the original VHDs of the VM are.
For restoring, I should simply choose the specific snapshat and click "restore". The VM then would be restored (OS and data) back to this Point in time.
This shouldn't be so difficult to be achieved. Microsoft already has it implemented in Hyper-V, why not using it in Azure?
