Attributes that we use in AD should be accessible in Azure, like EmployeeID, EmployeeNumber
add attribute mappings in Azure to match AD.

EmployeeId is synced to AAD and available in Graph and PowerShell.
We've also added them as extended attributes, but they're functionally useless from normal Powershell. And I have yet to see a guide on Graph API (beyond super-basic queries) that's pitched to administrators and not devs. How do you select a user and modify a property? How do you filter and run through a list of accounts and update a property? Maybe such guides exist, but I haven't seen one

These are available as extended attributes, but it gets messy as the application GUID(?) gets added to the attribute, and the only way you can see them in AAD is with Graph API (none of the PS cmdlets appear to see them). So, I agree, it would be nice to see a more complete list of AD attributes available to sync OOTB.
